Healthy Vegan Mayonnaise [Oil-Free]
This Healthy Vegan Mayonnaise is an oil-free alternative using silken tofu as the base, blended with lemon juice, apple cider vinegar, garlic powder, Dijon mustard, and salt. The result is a creamy, smooth mayonnaise substitute suitable for vegan diets and those avoiding oils.
Ingredients
- 1 soft silken tofu drained, 12-ounce
- 1 tablespoon lemon juice plus more to taste
- 1 teaspoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 ½ teaspoons Dijon mustard
- ½ teaspoon salt
Instructions
- Place all of the ingredients in a food processor or a blender for one minute or until completely smooth. Taste and adjust the levels of the ingredients to taste.
- Store in the refrigerator in an airtight container for up to a week.
Notes
- Use soft silken tofu to ensure a creamy, smooth mayonnaise texture.
- If the mayo is too thick, add plant-based milk cautiously to achieve the preferred consistency.
- Adjust seasonings after blending to suit your taste preferences.
- Allow the mayonnaise to rest refrigerated for an hour or more to let flavors blend fully before serving.
