Ingredients

  • 8 ounces cream cheese (softened, 250 grams, 1 brick)
  • ¼ cup icing sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup strawberries (fresh, diced)
  • ¼ cup strawberry jam
  • 2 sheets puff pastry (thawed, homemade or store bought)
  • 1 egg (whisked)

Instructions

    Cup of Yum
  1. Preheat oven to 400°F. Line 2 large cookie sheets or baking trays with parchment paper. Place oven racks in the upper and lower thirds of the oven.
  2. In a small bowl combine the cream cheese, icing sugar, egg yolk, and vanilla extract. Mix well with a fork or use a handheld mixer. Mix until evenly combined. (Ensure the cream cheese is at room temperature or else your mixture will have lumps. You can microwave the cream cheese on a microwave safe plate for 15-30 seconds to ensure it is softened).
  3. Dice the strawberries into small pieces. Add to a small bowl with the strawberry jam and mix until evenly combined.
  4. On a lightly floured cutting board or kitchen counter, unroll the thawed puff pastry sheets. Use a large heart shaped cookie cutter to cut as many hearts as you can (approximately 9 - 12 hearts per sheet).
  5. Then use a slightly smaller heart shaped cookie cutter (or knife) to make an indentation slightly smaller than the bigger heart. Gently press the smaller cookie cutter to indent the pastry but do not cut all the way through. This will create about a ⅓" edge for the pastries that will puff up and brown when baking. Tip: you can cut out smaller hearts with any leftover pastry to avoid any waste, or make small square pastries with the leftover cut pieces.
  6. Brush the edges of each heart with the whisked egg.
  7. Add a spoonful of the cheese filling to the center of each heart (approximately 1-2 tablespoon per heart) and spread just to the edge of the smaller heart outline without covering the egg washed edges.
  8. Top the cheese filling with the strawberry mixture.
  9. Place the pastries on the prepared baking trays. Space the pastries 2" apart as they will expand when baking.
  10. Repeat with second sheet of pastry.
  11. Bake for about 13-15 minutes or until the edges puff up and are golden brown, switch the trays between the upper and lower thirds of the oven halfway through cooking to ensure even cooking.
  12. Allow the pastries to cool slightly before serving, the strawberry filling will be very hot. Serve and enjoy!
