Heirloom Tomato and Cucumber Salad with Goat Cheese
This simple salad combines the flavors of summer: ripe heirloom tomatoes, crunchy cucumbers and creamy goat cheese.
Ingredients
- 2 tomato any variety - sliced, heirloom
- 2 cucumber sliced, medium
- ¼ cup goat cheese
- ¼ cup basil thinly sliced, fresh
- 2 tablespoons extra virgin olive oil
- salt to taste
- black pepper to taste
Instructions
- Arrange tomato and cucumber slices on a large platter and top with goat cheese crumbles and fresh basil.
- Drizzle with olive oil and season with salt and pepper to taste.
