Ingredients

  • heirloom tomato halved or quartered depending on size, several small
  • ½ English cucumber diced
  • ¼ onion sliced thinly, small sweet yellow
  • kalamata olive halved, handful
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • vinaigrette to taste, Fran's brand
  • 2 tbsp feta cheese crumbled

Instructions

  1. Prepare the vinaigrette ~ click the recipe link up above for instructions.
  2. Place the tomatoes in a bowl and add the cucumber, onion, and kalamata olives. Season with a bit of sea salt and freshly cracked pepper, to taste, then drizzle with the vinaigrette.
  3. Toss to coat evenly, then let it sit for 15-20 minutes for the flavors to mingle.
  4. Sprinkle the top with feta cheese right before serving. Enjoy.
