Herbed Chicken Noodle Soup
Herbed Chicken Noodle Soup features tender chicken drumstick meat combined with diced potatoes, pasta, and fresh herbs in a well-seasoned broth. A sautéed mix of carrots, garlic, green onions, and dill adds a fresh and aromatic dimension to the comforting soup, perfect for a mild, home-style meal.
Ingredients
- 1 lb chicken drumstick
- 4 quarts water for the soup (or chicken broth)
- 3 potato diced into 1 inch cubes, medium
- 1/2 cup pasta
- 1 tsp black pepper freshly ground
- 1 tsp salt adjust to taste
- 4 tbsp neutral cooking oil olive or avocado, generic cooking oil
- 3 carrot finely chopped
- 4 garlic minced, cloves
- 1 bunch green onion chopped
- 1 cup dill chopped, fresh
Instructions
- Boil the chicken drumsticks in salty water for 15 minutes. Drain, rinse the chicken, cut the meat off the bone, and slice it into small pieces. Toss the liquid and the bones.
- Fill a soup pot with four quarts of fresh water. Add the chicken, sliced potatoes, and pasta into the water and boil for 20 minutes. Add ground pepper and salt to taste.
- Add oil to large skillet (medium heat) and sauté the carrots and garlic until softened and slightly brown (about 7-10 minutes).
- Add the green onions and sauté them for another minute. Add the veggies to the soup pot, followed by the dill. Boil the soup for 10 more minutes on low heat. Enjoy!
