Herbed Couscous Pilaf

Ingredients

  • 1 tsp garlic olive oil
  • 1 shallot minced
  • ½ cup of whole wheat couscous
  • ½ cup + 1 tbsp chicken broth
  • Sea Salt and Freshly Cracked Pepper to taste
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped

Instructions

  1. Heat the garlic olive oil in a small saucepan over medium heat. Add the minced shallot and cook, stirring constantly, for 1-2 minutes.
  2. Add the couscous and cook, stirring often, for 2 minutes.
  3. Add the broth, sea salt, and freshly cracked pepper to taste; bring to a boil.
  4. Cover, remove from heat, and let stand for 5 minutes.
  5. Add the fresh parsley and chives, then fluff with a fork. Taste and add more seasonings if needed. Serve immediately. Enjoy.
