Hidden Vegetable Beef Burgers
These beef burgers incorporate grated carrot, zucchini, and shallot mixed into lean mince with garlic and herbs, adding moisture and mild vegetable flavors without changing the classic burger texture. They are seasoned with Worcestershire sauce and shaped into patties, chilled, then grilled to a juicy finish. Served in buns with lettuce, tomato, and sauce, these burgers offer a way to include vegetables discreetly.
Ingredients
- 500 g Lean beef mince
- 2 garlic crushed, clove
- 1 pinch sea salt
- 1 pinch black pepper
- 1 tablespoon Worcestershire sauce
- 1 egg whisked
- 2 tablespoon tomato puree
- 1 shallot large; diced
- 1 carrot small; grated
- 0.5 zucchini grated, aka courgette
- 1 handful mixed fresh herbs finely chopped (use whatever you have that needs using up)

Instructions
- Put all of the ingredients in a bowl and use your hands to mix well.
- Using your hands, form the mixture into 4 burger patties and put in the fridge for 30 minutes before cooking.
- Put your burger patties on to a hot BBQ grill and cook for 3 minutes one side and 6 minutes the other side for medium-well done.
- Stack your burgers by adding them to buns with lettuce, tomato and sauce.
Notes
- Chill burger patties in the fridge for at least 30 minutes before cooking to help them hold together.
- Instead of patties, shape the mix into meatballs and bake them in tomato sauce for a different dish.
- Experiment with herbs and spices to create different flavor profiles, such as Mexican, Cajun, or Italian.
- For a low-carb version, substitute the burger bun with a large lettuce leaf.
