Hiyashi Chuka with Goma(Sesame) dressing 冷やし中華

Hiyashi Chuka Cold Ramen is a refreshing Japanese cold noodle dish. All you need to know about how to make this dish with different topping and sauce options.

Ingredients

  • 2 ramen noodles packets, store bought
  • 1/2 cucumber
  • 1/2 tomato
  • 50 g ham
  • 2 egg to make Kinshi Tamago
Sesame dressing
  • 1 tsp chicken soup stock powder 1, gara style
  • 100 ml water hot
  • 4 tbs white sesame seed paste
  • 2 tbs soy sauce
  • 3 tbs sugar
  • 3 tbs rice wine vinegar
  • 2 tsp sesame oil
  • 2 tsp sesame seeds
Soy sauce vinaigrette
  • 1 tsp chicken soup stock powder gara style
  • 100 ml water hot
  • 6 tbsp soy sauce
  • 3 tbsp vinegar
  • 3 tbsp sugar
  • 2 tbsp sesame oil
Garnish suggestions *2
  • 2 tbsp pickled ginger
  • 1 tbsp scallions chopped
  • 1 tbsp mayonnaise Japanese Kewpie
  • 1/2 tsp mustard
  • 1 tsp white sesame seeds

Instructions

Making sauce
    Cup of Yum
  1. Dissolve the chicken gara soup stock powder by adding hot water and stirring in a mixing bowl.
  2. Add the rest of the ingredients and mix well and chill in the fridge until serving.
Hiyashi Chuka(cold noodle)
  1. Fry the egg thinly and cut it into thin strips. Set it aside to cool down.
  2. Slice the tomato thinly, shave the ham, cut the cucumber into thin sticks. Set all aside.
  3. Cook the noodle as per the packet instructions then allow it cool down. *3
  4. Assemble the Hiyashi Chuka by placing the cooked and chilled noodles on a plate then top with cucumber, tomato, ham and egg.
  5. Garnish with pickled ginger, a slice of lemon, chopped scallion. Add a little bit of Japanese mayonnaise and mustard.
  6. Pour the sesame dressing over the top and sprinkle with sesame seeds.

  • *2 These suggestions are optional. 
  • *3 Tips to make delicious Hiyashi Chuka are to drain water well and chill all ingredients well. So that the sauce will not be diluted with the remaining water in noodles. 
  • *4 Toppings are replaceable as you like.
