Hoisin Sauce Noodles with Chicken

Hoisin Sauce Noodles with Chicken is a quick and easy dinner idea. Thick noodles are mixed with chicken and greens with a delicious homemade sauce.

Ingredients

  • 1 pound chicken breasts cut into small pieces, boneless
  • 1 Tablespoon olive oil
  • 16 ounces udon noodles
  • 2 carrot peeled and sliced into thin strips
  • 1 red bell pepper sliced into thin strips
  • 4 green onions sliced
  • For the sauce:
  • 1 Tablespoon sesame oil
  • 1/3 cup soy sauce
  • 1 Tablespoon Sriracha sauce
  • 1/4 cup hoisin sauce
  • 1 Tablespoon garlic minced
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth

Instructions

  1. Cook the udon noodles based on the package instructions. Drain and rinse with cold water.  Set aside.
  2. Mix all the sauce ingredients together in a mixing bowl.
  3. Heat the olive oil in a large skillet over medium high heat.  Add the chicken and cook until the chicken starts to brown and is no longer pink.  Remove and set aside.
  4. Add the carrots and red bell pepper to the skillet and cook over medium high heat for 2-3 minutes until they are slightly tender.
  5. Add the chicken back to the skillet and toss in the noodles.  Pour the sauce on top and toss all the ingredients together to coat all the ingredients in the sauce.  Stir fry for 1-2 minutes until all the ingredients are heated through and covered in the sauce.
  6. Remove from heat and sprinkle the green onions on top.  Serve warm and enjoy!

Notes

  • Refrigerate the leftovers in an airtight container for up to 3-4 days.
