Ingredients
- 800 gms pork scotch fillet 1.75 lbs
- 400 gms pork rashers skin removed, 0.9 lbs
- 20 gms salt 1.25 tbsp
- 2 tbsp fennel seeds
- 115 ml red wine or white wine, ½ cup
- 1 tbsp black pepper freshly ground
- sausage casing edible
Notes
- This sausage can be frozen for up to 3 months, just wrap it in foil and then put it into a Ziploc bag before freezing it.
