Ingredients

  • 800 gms pork scotch fillet 1.75 lbs
  • 400 gms pork rashers skin removed, 0.9 lbs
  • 20 gms salt 1.25 tbsp
  • 2 tbsp fennel seeds
  • 115 ml red wine or white wine, ½ cup
  • 1 tbsp black pepper freshly ground
  • sausage casing edible

Notes

  • This sausage can be frozen for up to 3 months, just wrap it in foil and then put it into a Ziploc bag before freezing it.
