Ingredients

  • 1 cup granulated sugar
  • 3 ripe bananas
  • ½ cup water
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

    Cup of Yum
  1. Prepare the bananas by peeling bananas and slicing them into small pieces.
  2. In a small saucepan combine the granulated sugar and water. Place the saucepan over medium heat and stir the mixture continuously until the sugar is completely dissolved.
  3. Once the sugar has dissolved add the salt and sliced bananas. Reduce the heat to low and let the mixture simmer gently for about 10-15 minutes. Stir occasionally to prevent sticking and to help the bananas break down.
  4. After simmering, remove the saucepan from the heat and stir in the vanilla extract. Allow the mixture to cool slightly.
  5. Once the mixture has cooled a bit, strain it through a fine mesh sieve or cheesecloth into a clean container to remove any banana solids.
  6. Let the syrup cool to room temperature before transferring it to a jar or bottle for storage.

Notes

  • Make it sugar-free. Swap the granulated sugar for a substitute like stevia to make it sugar-free.
  • Be sure the bananas aren’t too soft. You want ripe bananas that are still firm and not mushy or they will be difficult to strain.
  • Warm before use. Feel free to gently heat some of the banana syrup over low heat and serve warm for the best flavor.
  • Storing: Store this banana syrup in a sealed jar for up to 2 weeks in the refrigerator. I do not recommend storing it in the freezer.
  • Using Banana Syrup: Experiment with the concentration of the syrup to find the right balance of sweetness and banana flavor for the dishes your using it in.
