Homemade Blueberry Syrup Recipe

Homemade Blueberry Syrup is the perfect quick syrup for pancakes and waffles. It uses a blueberry compote and comes together in just 30 minutes!

Ingredients

  • 2 cups blueberries , fresh or frozen and thawed
  • 1 cup sugar
  • 2 tablespoons water
  • 1 cup heavy cream
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • Dash of fine sea salt

Instructions

  1. In a heavy bottom saucepan over medium heat, combine the blueberries, sugar and water. Stir every few minutes with a wooden spoon until mixture has turned into a bright blue syrup, but thin.
  2. Reduce the heat to low and whisk in the heavy cream, butter and vanilla. The mixture will start to thicken.
  3. Stir in a dash of the fine sea salt and allow to cool for 5-10 minutes before serving. Mixture will thicken even more while cooling.
