This Blueberry Vinaigrette is the perfect balance of sweet and savory and the epitome of an easy vinaigrette. All you need is a cup of juicy blueberries and 3 additional ingredients (plus a few opt-ins). Prep your favorite salad and get ready to drizzle your heart out.

Ingredients

  • ¼ cup balsamic vinegar aged
  • ⅓ cup extra virgin olive oil
  • 1 Tablespoon lemon juice fresh
  • 1 cup blueberries fresh
  • 1 clove garlic optional
  • 1-2 teaspoons maple syrup optional
  • ¼ teaspoon salt or to taste, fine sea salt
  • black pepper to taste, freshly ground

Instructions

  1. Add all ingredients to a blender. Increase the speed of the blender to start breaking down the blueberries and garlic (if using). Blend on medium to medium-high speed for 1-2 minutes until smooth.
  2. Taste test and adjust salt and pepper levels, as needed. Store in the fridge in an airtight container for up to 5 days. Enjoy on your favorite blend of salad!
