Homemade Caesar Dressing

Homemade Caesar Dressing combines garlic, anchovies, lemon juice, mustard, Worcestershire sauce, mayonnaise, and freshly grated Parmesan to create a thick, creamy dressing with a bright, savory flavor. The anchovies provide a subtle umami depth essential to classic Caesar taste. Blending or whisking the ingredients ensures a smooth texture, which can be thinned with extra lemon juice to preferred consistency.

Ingredients

  • 2 cloves garlic
  • 1-2 anchovies
  • 3 TBSP lemon juice approx. 1 + 1/2 large lemons, fresh
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 cup mayonnaise homemade or store bought, quality
  • ½ cup Parmesan Cheese freshly grated
  • ¼ tsp salt sea salt
  • ¼ tsp black pepper freshly ground

  1. For a perfectly blended dressing, I highly suggest using an immersion blender or food processor. You'll simply combine all your dressing ingredients and blend well. To thin the dressing, add extra lemon juice as desired.
  2. You can also make the dressing with simply a bowl and a whisk by mashing then mincing your garlic and using anchovy paste in place of whole tinned anchovies. Easy peasy!
  3. You are totally welcome to add extra of your favorite ingredients. I suggest starting with the above recipe and tasting it with a few lettuce leaves, then adding a little of any particular ingredient you choose. Some opt for extra garlic, some prefer more anchovies or Worcestershire sauce, and some people (like myself) love extra lemon juice. 

Notes

  • Use an immersion blender or food processor to create a smooth, creamy texture for the dressing.
  • Adjust the thickness by adding lemon juice to thin the dressing as desired.
  • Anchovies are key to authentic Caesar flavor; you can freeze extra anchovies for future use or substitute with anchovy paste.
  • Freshly grated Parmigiano-Reggiano cheese enhances the dressing’s flavor significantly compared to pre-grated cheese.
  • Omitting anchovies results in a creamy parmesan dressing without traditional Caesar umami.
