Homemade Chicken Noodle Soup

Homemade Chicken Noodle Soup combines tender chunks of chicken, sautéed aromatic vegetables, and wide egg noodles in a flavorful chicken broth. The broth is infused with thyme and bay leaf to give depth without overpowering the delicate taste. The soft vegetables and noodles create a comforting texture, making it a satisfying soup that can be prepared from leftover chicken or poached meat. It is a practical choice for a hearty meal and can be easily made in a slow cooker for convenience.

Ingredients

  • 2 tablespoons olive oil or butter
  • 1 onion finely chopped
  • 1 carrot peeled and chopped
  • 1 celery chopped, rib
  • 8 cups chicken broth (2 quarts, see note 1)
  • 3 cups chicken chopped or shredded (see note 2, cooked
  • 2 teaspoons thyme minced, or 1/2 teaspoon dried, fresh
  • 1 bay leaf
  • 8 ounces egg noodles wide
  • salt freshly ground
  • black pepper freshly ground
  • parsley minced, for garnish, fresh

Instructions

    Cup of Yum
  1. In a large pot or Dutch oven, heat olive oil over medium-high heat until shimmering. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  2. Stir in broth, chicken, thyme, and bay leaf. Bring to simmer and cook until vegetables are tender, about 15 minutes.
  3. Stir in noodles and cook until tender, about 5 minutes longer. Remove from heat, season to taste with salt and pepper, and garnish with fresh parsley.

Notes

  • Use leftover cooked chicken torn into bite-sized pieces or poach a fresh chicken to prepare broth and meat simultaneously.
  • Homemade chicken broth provides the best depth of flavor, but quality broth or bouillon paste can be used as alternatives.
  • Store any leftover soup covered in the refrigerator for up to four days.
  • Slow cooker instructions allow you to prepare this soup by cooking all ingredients except noodles in the crockpot and adding noodles near the end for a convenient option.
