Ingredients

  • 1/2 cup butter melted, unsalted
  • 3/4 cup sugar
  • 2 large egg
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

  1. Preheat the oven to 350 degrees Fahrenheit. Grease an 8x8-inch pan and set aside.
  2. In a large mixing bowl, whisk together 1/2 cup unsalted butter and 3/4 cup sugar. Add in 2 large eggs and 1 cup buttermilk and stir until combined.
  3. Whisk together 1 cup cornmeal, 1 cup all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon baking powder and 1/4 teaspoon salt in another large mixing bowl. Add the wet ingredients to the bowl and stir until combined. The batter will be lumpy.
  4. Pour the mixture into your prepared 8x8-inch pan. Bake for 30 minutes or until golden brown. Insert a toothpick, and when it comes out clean, it's ready.
