Homemade Egg Noodles
These thick and tender Homemade Egg Noodles are made from scratch in under 30 minutes—ideal for a quick weeknight meal.
Ingredients
- 2 cups all-purpose flour
- 1 3/4 teaspoons salt
- 3 egg large yolks
- 1 egg large
- 5 tablespoons water plus more if needed
Instructions
- On a floured surface, combine flour and salt. Create a well and add the egg yolks along with the whole egg. Gradually incorporate water, adding one tablespoon at a time with your fingers until a dough is formed; stop adding water once the dough comes together.
- Knead the dough by hand for approximately 10 minutes until it is smooth and elastic. Allow the dough to rest for 10 minutes.
- After resting, roll out the dough into a rectangle (about 1/8-inch thick) and cut it into strips between 1/8-inch and 1/4-inch wide using a knife or pizza cutter.
- Bring a large pot of salted water to a boil. Add the freshly cut noodles and cook for 2 to 4 minutes until tender. Drain the noodles and serve with your favorite sauce or in soup.
