Homemade Egg Noodles

Ingredients

  • 2 1/2 cups flour
  • 1/4 teaspoon kosher salt (plus extra for the water)
  • 4 large egg yolk
  • 1/2 cup milk whole
  • 2 tablespoons butter melted, unsalted

Instructions

  1. To a stand mixer, add the flour and salt with the beater attachment on low speed.
  2. Add in one egg at a time, then add in the milk very slowly followed by the melted butter.
  3. When combined switch to the dough hook and knead on low speed for 5 minutes.
  4. Cover bowl with clean kitchen towel and let dough rest for 15 minutes.
  5. Cut dough into 4 pieces.
  6. Roll out each piece of dough very thin, 1/8-inch thick (remember as your pasta cooks it will double in thickness).
  7. Once you've rolled the dough thin enough, gently add a bit of flour across the top and roll up loosely.
  8. Cut to desired noodle width (somewhere between 1/4- and 1/2-inch wide).
  9. Gently loosen the rolls of pasta and let dry for 15 minutes.
To cook:
  1. Add water and about heaping tablespoon of salt to a large pot and bring to a boil.
  2. Add noodles and cook for 4-6 minutes depending on the thickness of the noodles.
  3. Toss with butter before serving.
