Homemade Enchilada Sauce

Ingredients

  • 2 tablespoons vegetable or olive oil
  • 2 tablespoons all-purpose flour
  • 3 tablespoons chili powder
  • 1 teaspoon granulated sugar
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 8 ounce can tomato sauce
  • 2 cups chicken broth

Instructions

  1. Heat the vegetable oil in a large saucepan over medium heat. Whisk the flour and chili powder into the hot oil and cook for 1-2 minutes, whisking often, until the mixture is beginning to darken in color.
  2. Add the remaining spices and the tomato sauce and stir until well combined. Add the chicken broth and mix well.
  3. Cook the sauce over medium heat for 8-10 minutes until thickened, stirring often.
  4. Remove the sauce from the heat and serve warm, or cool to room temperature before using to make enchiladas.
