Homemade Funfetti Cookies

Funfetti Cookies are a colorful dessert to make year-round! These made-from-scratch sprinkle cookies mix up easily and bake beautifully from a sugar cookie base. Inspired by the favorite childhood boxed birthday cake, these Funfetti Cookies are slightly chewy, soft and chock full of rainbow sprinkles. Perfect for birthday parties, graduations, baby showers, tailgates and more, Funfetti Cookies are a delicious treat to serve for any occasion!

Ingredients

  • ½ cup unsalted butter softened (1 stick)
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 2 teaspoons pure vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda
  • 1 cup Rainbow sprinkles
  • ½ cup Rainbow nonpareils for rolling

  1. In a large mixing bowl, whip the softened butter, brown sugar and granulated sugar with a hand (or stand) mixer until the butter is light yellow and the sugars are well incorporated.
  2. Add in the egg and vanilla extract, beating until combined.
  3. Combine the dry ingredients--flour, salt and soda--in a smaller bowl, and whisk.
  4. Pour in half of the dry ingredients, mixing until combined, then add the other half, blending until the batter has come together.
  5. Measure in ½ cup of the rainbow sprinkles. Stir them into the batter with a spoon.
  6. Chill the dough for at least 2 hours (or overnight.)
  7. Preheat the oven to 350°F. Line a baking sheet with parchment paper or a nonstick baking mat.
  8. Combine the rest of the rainbow sprinkles with the nonpareils.
  9. Use a cookie scooper to out rounds of the cookie dough. Roll the cookie dough in your hands until rounded and smooth.
  10. Roll in the mixture of rainbow sprinkles and nonpareils until coated.
  11. Place the cookie dough on the baking sheet, leaving about 2” between each so the dough can spread as it bakes.
  12. Bake for 10-11 minutes, or until golden brown.
  13. Enjoy warm with a glass of your favorite kind of milk!

Notes

  • If the cookies are cooled and you'd like them warm to eat, heat up in the toaster oven OR microwave on a microwave-safe plate for 10-15 seconds, or until the centers of the cookie is just slightly gooey.
