This homemade granola hits the jackpot as it is super easy to make, super crunchy, AND super delicious! Perfect for breakfast, snacking or eating as trail mix!

Ingredients

  • ⅓ cup coconut oil melted
  • ¼ cup agave sweetener
  • ½ tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 ½ cups old fashioned oats
  • 1 cup walnuts roughly chopped
  • 2 tablespoons chia seeds
  • 1 tablespoon flax seeds ground
  • 1 teaspoon cinnamon
  • ¼ teaspoons nutmeg
  • ¾ cup craisins

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a sheet pan with parchment paper. Set aside.
  2. In a large bowl, combine the coconut oil, molasses, lemon juice, and vanilla extract. Stir until combined.
  3. Add in the rolled oats, walnuts, pepitas, chia seeds, flax seeds, cinnamon, and nutmeg. Stir thoroughly until everything is well coated.
  4. Spread the granola evenly on the sheet pan and bake for 20-25 minutes or until golden brown.
  5. Remove from the oven.
  6. Let sit for 10 minutes before topping with craisins.
  7. Let cool completely before breaking it up and serving.
