Homemade Granola Recipe with Olive Oil and Tahini

This homemade granola combines rolled oats, pistachios, walnuts, sunflower and sesame seeds, plus unsweetened coconut flakes for texture and flavor. The mixture is bound with a dressing of honey, tahini, olive oil, vanilla, brown sugar, cinnamon, and cardamom, then baked until golden and crunchy. After cooling, chopped Medjool dates and dried cranberries are mixed in to add fruity sweetness and chewy contrast. This granola offers a nutty, aromatic profile and a satisfying crispness suitable for breakfast or snacking.

Ingredients

  • 2 1/2 cups rolled oats old-fashioned
  • ¾ cup pistachios shelled
  • ¾ cup walnuts
  • ½ cup sunflower seed
  • 3 tablespoons sesame seed raw
  • 1 cup coconut flakes unsweetened
  • ¾ cup honey warmed up so it’s runny
  • 2/3 cup tahini
  • ½ cup extra virgin olive oil
  • 2 teaspoons vanilla extract pure
  • ½ cup light brown sugar packed
  • ½ teaspoon ground cinnamon
  • ½ teaspoon cardamom
  • ½ cup Medjool dates about 6 dates, pitted and chopped, chopped
  • ½ cup dry cranberries or cherries

Instructions

  1. Heat the oven to 350 degrees F.
  2. Combine the oats, pistachios, walnuts, sunflower seed, and sesame seeds, and coconut flakes in a large bowl.
  3. In another bowl, mix the honey, tahini, olive oil, vanilla extract, brown sugar, cinnamon and cardamom. Pour over the oat mixture and toss until the oat mixture is well-coated.
  4. Spread the mixture on a large sheet pan in one single layer. Bake in the heated oven, stirring every 7 to 10 minutes, until the mixture is golden and well-toasted (anywhere from 30 to 45 minutes)
  5. Remove from the heat and allow the granola to cool completely. Break it up into clusters and mix in the dates and cranberries (or other dried fruits of your choice).

Notes

  • Store the cooled granola in a sealed container to keep it fresh for up to two weeks.
  • Use quality olive oil and tahini to enhance the granola's flavor.
  • Mix in dried fruits such as dates and cranberries only after the granola has fully cooled to prevent sogginess.
