Homemade Maple Peanut Brittle

This homemade maple peanut brittle gives you all the flavor of traditional peanut brittle with a hint of maple flavor. It's the perfect holiday candy and a great addition to your holiday cookie tray.

Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1/4 cup water
  • 2 cups Spanish peanuts
  • 2 teaspoons maple extract
  • 1 teaspoon baking soda

Instructions

  1. Line a rimmed baking sheet with a Silpat liner and set aside.
  2. In a pot add sugar, light corn syrup, and water. Set over medium heat and stir constantly until the mixture starts to boil.
  3. Once the mixture starts to boil stop stirring and let the mixture boil.
  4. Using a candy thermometer test the mixture (or clip the thermometer to the side of the pot) until it reaches 285 degrees F.
  5. Once it reaches 285 degrees F stir in the peanuts and let the mixture cook for a few minutes longer until it reaches 300 degrees F.
  6. Once it reaches 300 degrees F take the pot off the stove and quickly stir in the maple extract and baking soda.
  7. Pour the mixture out onto the Silpat lined sheet pan and spread out the mixture as thin as you can get it. It will be sticky so it’s ok if it doesn’t get super thin.
  8. Let the mixture cool and then break it into pieces.
