Homemade Mayonnaise

Homemade Mayonnaise is a creamy, delicious condiment with an egg and Dijon mustard base that is delicious on sandwiches, in salads, and as a dip.

Ingredients

  • 2 large eggs*
  • 4 teaspoons Dijon mustard
  • 2 tablespoons white wine vinegar
  • 4 teaspoons lemon juice, fresh squeezed
  • 1 teaspoon kosher salt
  • ¼ teaspoon granulated sugar
  • 2 cups canola oil

Instructions

  1. To the bowl of a food processor, add egg, Dijon mustard, vinegar, lemon juice, salt, and sugar. Process for 30 seconds, or until smooth & combined.
  2. With the processor on, slowly add the oil in a thin stream, as gradually as you can, until the liquid thickens & lightens a bit, becoming an emulsion.
  3. Store in a sealed container in the refrigerator for 3-4 days.

Notes

  • *The USDA recommends pasteurized eggs for safe consumption of homemade mayonnaise. These can easily be found at your grocery store.
