Homemade mayonnaise
Homemade mayonnaise is an emulsion of egg, neutral oil, lemon juice or vinegar, and salt. It is blended slowly to achieve a thick, creamy texture. Optional flavorings like garlic, herbs, and spices can be added during or after blending to customize taste. This mayonnaise serves as a base for dressings, spreads, or sauces.
Ingredients
- 1 egg
- 3/4-1 cup neutral cooking oil I prefer a neutral oil like avocado or sunflower oil, generic cooking oil
- 2 tbs lemon juice or vinegar to taste
- salt to taste
Instructions
- Combine the egg, a pinch of salt, and a tiny amount of oil in a blender, blend until well mixed.
- Continue blending and add the oil very slowly at first until the mix begins to thicken.
- Once it begins to thicken you can add the oil at a steady drizzle, once the blending starts to slow down you can turn off the blender and add the lemon juice or vinegar.
- Blend until the lemon juice is mixed in, taste and add additional salt if needed.
Notes
- Add flavoring ingredients like crushed garlic, onion, chili peppers, chipotle paste, or fresh herbs with the egg or with the lemon juice for different intensities.
- Use neutral oils such as avocado or sunflower oil for a mild base flavor.
- Adding lemon juice or vinegar at the end brightens flavor and helps stabilize the emulsion.
