Homemade Queso Fundido Recipe
Homemade Queso Fundido combines cooked chorizo sausage with a fresh salsa made from diced tomatoes, Serrano peppers, and cilantro, layered with shredded Chihuahua and Oaxaca cheeses. Baked until bubbly and browned on the edges, this dish offers a rich, melty texture with spicy, savory meat balanced by bright, tangy salsa. It’s ideal for scooping with tortilla chips or warm tortillas, making it a satisfying appetizer or party dish.
Ingredients
- 4 tomato seeded, medium diced
- 2 Serrano pepper seeded, small diced
- ½ yellow onion peeled and small diced
- lime juice of 1
- 2 tablespoons cilantro fresh, roughly chopped
- 2 tablespoons olive oil
- 1 pound chorizo sausage loose
- 1 pound Chihuahua cheese shredded
- ½ pound Oaxaca cheese shredded
- green onion sliced
- salt to taste
- black pepper to taste
Instructions
- Preheat the oven to 350°.
- In a medium-size bowl mix together the tomatoes, peppers, onions, cilantro, lime juice, salt, and pepper until combined and set aside.
- Next, add the olive oil to a medium-size frying pan over medium-high heat and cook the sausage until it’s cooked throughout.
- To assemble, Layer on as followed into a souffle or small casserole dish: cooked chorizo, salsa, and cheese. Repeat 1 more time reserving a little bit of the cooked sausage and salsa.
- Bake in the oven at 350° for 15 minutes or until the cheese is completely melted and browned around the outside edges.
- Serve with assorted dippers and top off with the remaining chorizo and salsa.
Notes
- Prepare the dish up to one hour ahead and keep warm in a low oven before serving.
- Store leftovers covered in the refrigerator for up to three days.
- Reheat uncovered in a 350°F oven for 5 to 10 minutes until cheese melts through.
