Homemade Raffaello Candy
Homemade Raffaello Candy offers a rich, creamy treat combining butter and sugar creamed together, dry milk powder, shredded coconut, and crushed vanilla wafers. The mixture is chilled, then shaped around whole roasted almonds and rolled in coconut flakes, resulting in bite-sized confections with a crunchy almond center encased in a sweet, coconut coating.
Ingredients
- 1/2 cup sugar
- 1/2 cup butter at room temperature
- 1 cup milk powder dry
- 3/4 cup coconut dried shredded
- 1 cup vanilla wafers sugar wafers with the cream in the middle, not the round thin cookies, crushed
- 1 teaspoon vanilla extract or almond extract
- 1/4 cup almond roasted
- 1/2 cup coconut dried shredded, for rolling
Instructions
- In a stand mixer beat together butter and sugar 2 minutes on medium speed.
- Reduce speed to low and add milk powder, 3/4 cup coconut, vanilla wafers, and extract to combine. Refrigerate one hour or overnight.
- Using a cookie scoop measure out dough balls and insert an almond into the center. Carefully remove the candy dough from the scoop and gently use your hands to shape the candy into balls. Roll each ball in coconut and serve.
- Store in an airtight container refrigerated for up to 3 days.
Notes
- Use vanilla cream wafers with a creamy filling, not plain round cookies like Nilla wafers, for authentic flavor and texture.
- Refrigerate the shaped candies in an airtight container and consume within three days for best freshness.
