Ingredients

  • 1 cup sliced strawberries this started out as 8 ounces of whole berries with tops
  • 1/4 cup sugar divided. Or 5 Tablespoons Allulose sweetener.
  • 1 Tablespoon Cointreau or vodka
  • ¼ cup Lyle’s Golden Syrup in theory you should be able to use Karo syrup, but I haven’t tested this
  • ½ cup 2% milk
  • ½ cup heavy cream
  • 1 Tablespoon nonfat dry milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon guar gum optional but recommended

Instructions

    Cup of Yum
  1. Remove a couple berries, chop them into whatever size pieces you want in your ice cream (smaller is probably better since big pieces may get quite hard) and mix with 1 Tablespoon sugar and the Cointreau or vodka.  Set aside.
  2. Mix the dry ingredients: guar gum (if using), the remaining sugar, nonfat dry milk and salt. Set aside
  3. In a high speed blender, process the milk, cream, Golden Syrup, remaining strawberries (those not mixed with sugar and Cointreau) until the strawberries are well broken up.
  4. Add the dry ingredients and blend until well mixed.
  5. Stir in the reserved strawberry sugar mixture.
  6. Freeze according to your freezer’s directions. When done transfer ice cream to your freezer to firm up overnight (after snitching a few tastes).
