Ingredients

  • 1 ½ pounds fresh strawberries (washed, hulled, and chopped)
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tablespoon lemon juice optional

Instructions

    Cup of Yum
  1. Combine strawberries, sugar, and water in a blender. Add lemon juice, if using. Blend until smooth.
  2. Carefully pour the strawberry mixture into a popsicle mold.
  3. Cover the mold with the lid and insert the popsicle sticks.
  4. Freeze for at least 5 hours.
  5. Take the popsicle mold out of the freezer and run the outside under hot water for 10-20 seconds to ease the release of the popsicles.
  6. Enjoy them right away or store each popsicle individually in small plastic bags. Seal the bags and return them to the freezer for later.

Notes

  • The lemon juice is optional and just helps to brighten up the flavor and make it taste a bit more fresh. We use it when we have lemons on hand, but don't fret if you don't have any.
  • We use this popsicle mold. It works well and makes life easy. You could also freeze these in small paper cups if you don't have a mold.
  • A food processor will also work well in place of a blender.
