Homemade Tomato Sauce
This homemade tomato sauce is made with fresh tomatoes, garlic, and , herbs. It smells amazing, tastes delicious, and you won't believe how simple it is to make with just a handful of fresh ingredients.

Ingredients
- 2 tbsp olive oil
- 3 lbs paste tomatoes
- ¼ lb onions quartered, optional
- 7 cloves garlic peeled
- 1 tsp fresh thyme or substitute dried
- 1 tsp fresh oregano chopped, or substitute dried
- 1 tsp fresh Rosemary chopped, or substitute dried
- 1 tbsp fresh basil or substitute dried
- salt to taste
Instructions
- Preheat oven to 350F (177C).
- On a baking sheet, toss the tomatoes, onion, garlic, and herbs with olive oil.
- Roast in oven for 45 minutes.
- Allow to cool. Gently peel off the tomato skins, and discard.
- Transfer to a blender, and blend until smooth.
- Season to taste with salt - I used 1 tsp.

Notes
- This recipe is used with permission from the cookbook, The Ultimate Guide to Preserving Vegetables, with minor modifications. Due to current produce availability, I omitted the onion and used dried herbs instead of fresh. Feel free to do the same, as it was delicious!
