Homemade Turkey Gravy Recipe with or without drippings
This turkey gravy uses fat drippings (or butter) combined with flour and turkey drippings or stock to create a smooth, flavorful sauce. It can be made whether you have drippings from roasting or just stock, and uses simple seasonings of salt and pepper. The gravy is cooked to thicken on the stovetop, making it a practical accompaniment to turkey and other dishes.
Ingredients
- 1/4 cup fat drippings or butter, skimmed from drippings
- 2 tablespoons flour or cornstarch for gluten free
- 1 1/2 cups turkey drippings or turkey stock, from the roast
- salt to taste
- black pepper to taste
Instructions
- Pour off all the turkey drippings into a large bowl or liquid measure. Skim off the fat. Return 1/4 cup fat to the roasting pan. Place over medium to medium high heat.
- Add flour and whisk to create a paste. Cook 1 minute. Whisk in remaining drippings. Bring to boil and then reduce to simmer, whisking to avoid lumps. After gravy boils, it should thicken up nicely.
- Taste and add salt or pepper if desired. Serve gravy warm.
Notes
- Substitute butter if insufficient turkey fat is available.
- Use chicken or turkey stock if drippings are limited.
- For thicker gravy, add extra flour; thin by whisking in more stock.
- The recipe easily doubles for larger quantities.
