Ingredients

  • 1 mini cucumber or ½ regular
  • 6 ounces plain greek yogurt
  • ¼ cup feta cheese crumbles
  • ½ avocado diced
  • 1 Tablespoon lemon juice
  • 1 Tablespoon olive oil
  • ½ teaspoon fresh dill chopped
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Instructions

    Cup of Yum
  1. Slice the cucumber in half lengthwise and scrape out the seeds, if using a full-sized cucumber. Discard the seeds. If using a mini cucumber just rinse and dice.
  2. Combine the avocado with the yogurt and mix to combine. For smoother sauce, mash and mix the avocado well, or leave diced for a chunkier sauce.
  3. After dicing the cucumber, place in a mixing bowl. Add the remaining ingredients and mix well.
  4. Mix together the avocado yogurt in the bowl with the other ingredients.
  5. Cover and refrigerate until needed, at least 30 minutes but does better chilled for at least 4 hours.
