Homestyle Slow Cooker Garlic Parmesan Potatoes

This slow cooker garlic parmesan potatoes recipe is the perfect addition to any main course! They practically go with anything - proteins like fish or chicken, roasted vegetables, and they are even good on its own!

Ingredients

  • 1.5 lb baby potatoes
  • 1 lemon for juice and zest
  • ½ cup grated Parmesan cheese
  • ¼ cup olive oil
  • 1 tbsp minced garlic 
  • ½ tsp rosemary
  • ½ tsp thyme
  • ½ tsp salt

Instructions

  1. Start by washing the baby potatoes. Alternatively, you can also use regular-sized russet potatoes and cut them into 1-inch pieces.
  2. Add all of the ingredients to the slow cooker.
  3. Mix well until the potatoes are well-coated.
  4. Set the slow cooker on high and let the potatoes cook for about 1.5 hours or until fork-tender. 
  5. Once the potatoes are cooked, remove them from the crockpot and transfer them to a serving dish. Garnish with a lemon slice, and fresh herbs, such as parsley or chives, for an extra pop of flavor. Pair with your choice of protein and enjoy!

Notes

  • Even Pieces: Cutting your potatoes into uniform sizes ensures they cook evenly.
  • Select the Best Potatoes: When selecting potatoes, opt for non-waxy potatoes like small Yukon gold potatoes or russet potatoes. They have the perfect texture for slow cooking and will become tender and flavorful. Plus, they hold their shape well during the slow cooking process.
  • Cooking Time: If you prefer your potatoes to be more tender, cook them for 3 hours on low heat instead of high heat.
