- 4 (5-ounce) salmon fillets
- 1 teaspoon olive oil
- 2 cloves minced garlic
- 1 tablespoon honey
- ⅓ cup balsamic vinegar
- 4 teaspoons Dijon mustard
- salt and pepper to taste
- 1 tablespoon chopped fresh oregano, for garnish
Instructions
- Preheat the oven to 400 degrees Fahrenhet. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
- In a medium saucepan over medium heat, add 1 teaspoon olive oil and 2 cloves minced garlic. Cook the garlic until tender, about 2-3 minutes.
- Add 1 tablespoon honey, ⅓ cup balsamic vinegar, 4 teaspoons Dijon mustard, and salt and pepper to taste
- Simmer the glaze for about 3 minutes until it starts to thicken then remove it from the heat.
- Place the 4 (5-ounce) salmon fillets on the prepared baking sheet. Brush the salmon with the balsamic glaze but reserve half of the glaze for brushing on at the end.
- Bake for about 6-10 minutes until the flesh turns opaque and flakes easily with a fork.
- Brush the fillets with the remaining glaze and serve. Garnish with 1 tablespoon chopped fresh oregano, if desired.
