Ingredients

  • ½ cup wholemeal flour ( whole wheat flour)
  • ½ cup self-raising flour
  • ½ teaspoon bicarbonate of soda
  • ¼ cup honey
  • ½ teaspoon ground cinnamon
  • 2 banana well ripen
  • 2 egg
  • 2 tablespoon milk
  • 2 tablespoon vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  2. In a bowl, sift the flours, add the bicarb of soda and cinnamon.
  3. In a separate bowl, beat the eggs until frothy, add the milk, honey, oil and vanilla extract.
  4. Use a fork to mash the bananas, then add them to the egg mixture.
  5. Combine the dry ingredients with the wet ingredients.
  6. Grease and flour a load tin, then pour the batter in.
  7. Bake for 35 minutes or until a skewer inserted in the middle comes out clean (I placed the tin on the middle rack in the oven after 20 minutes, to avoid the top from browning too quickly.

Notes

  • You can substitute all-purpose flour or wholemeal flour solely depending on your preference.
  • Vegetable oil can be replaced with coconut oil, olive oil, or butter for different flavors and moistness.
  • Add nuts such as walnuts or almonds for added crunch if desired.
  • Incorporate dried fruits like raisins, dates, or chopped dried apricots to vary texture and taste.
  • Alternative milks like soy or other plant-based options can replace regular milk.
