Ingredients
- 2 chipotle chilies with adobo sauce
- 1/4 cup honey
- 1 tbsp apple cider vinegar
- 2 tbsp olive oil
- 2 tbsp Coconut aminos
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 lb boneless and skinless chicken breasts
- To serve: lime wedges, chopped parsley, or cilantro to garnish
Instructions
- In a small food processor combine the 2 chipotle chilies with honey, vinegar, oil, coconut aminos, and seasonings. Process until almost smooth.
- Pour the chipotle mixture over the raw chicken breast, and stir to coat. Marinate for 1 hour or overnight, in the fridge. Remove the marinated chicken from the fridge, 30 minutes prior to cooking.
- Preheat an outdoor grill or a grill pan over medium heat. Grill the chicken breast until nicely charred and the internal temperature reaches 165 degrees F.

Notes
- Place leftovers in an airtight container or in ziplock bag. They will keep in the fridge for up to 3 to 4 days. You can also freeze the chicken in a freezer-safe container or bag for up to about 3 months.
