Honey Chipotle Mashed Sweet Potatoes

A quick and easy side dish recipe, mashed sweet potatoes get a sweet and smoky kick from honey and chipotle peppers in adobo.

Ingredients

  • 6 sweet potato peeled and quartered
  • 1 cup milk whole
  • ¼ cup honey
  • 3 chipotle peppers in adobo sauce (minced)
  • 3 tablespoons butter unsalted
  • 1 ½ teaspoons salt

Instructions

  1. Place sweet potatoes in a large pot and cover with cold water. Bring to a boil then simmer until potatoes are fork tender, about 8-10 minutes; strain.
  2. Place warm, cooked potatoes back in the same pot and add all remaining ingredients. Puree until smooth using an immersion blender. Alternatively, place in a food processor and pulse until smooth or use a potato masher for a chunkier result.
  3. Check for seasoning and adjust accordingly before serving.
