Ingredients
- 2 ½ cups green beans (trimmed and cut into 1 inch pieces, approximately 400 grams)
- 4 boneless skinless chicken breast (approximately 2 lbs, cut into 1” cubes)
- 2 teaspoon oil (cooking oil of choice)
Chicken Marinade
- 4 cloves garlic (minced)
- 2 teaspoon ginger (fresh grated)
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine (Chinese cooking wine, optional, omit if you do not have it (this ingredient tenderizes the chicken))
Sauce
- 4 cloves garlic (minced)
- 1 teaspoon ginger (fresh grated)
- ¼ cup chicken broth (or water)
- ¼ cup soy sauce
- 4 tablespoon honey
- 2 teaspoon corn starch
Accompaniments (Optional)
- rice (for serving)
Instructions
- Note: if serving the stir fry with rice, start cooking the rice in your rice cooker, Instant Pot or stove top while you prepare the stir fry. By the time the stir fry is ready your rice will be ready as well.
- In a medium sized bowl combine the cubed chicken breast and all of the marinade ingredients. Mix until evenly combined. Set aside to marinate while you prepare the green beans.
- Trim the green beans to remove their ends and slice into 1” long pieces.
- Heat 1 teaspoon of oil in a large pan over medium heat.
- Add the green beans and cook for approximately 3-4 minutes or until the beans are tender.
- Remove the green beans from the pan and set aside.
- Increase heat to high and add the remaining teaspoon of oil.
- Add the seasoned chicken to the pan in a single layer. You may need to do this in batches, so you do not overcrowd the pan. Cook for 3-4 minutes on each side until golden brown and cooked through.
- Add the green beans back to the pan and cook for 2 more minutes or until the green beans are warmed through.
- In a bowl whisk together all the sauce ingredients.
- Pour the sauce mixture over the chicken and green beans. Cook for 1-2 more minutes or until the sauce has just started to thicken, stirring constantly.
- Serve with rice and enjoy!
