Ingredients
- 6-8 chicken thighs bone in, skin on
- ¼ cup honey
- ¼ cup soy sauce
- 2 lemon juiced
- 1 tblsp garlic minced
- salt
- pepper
- cooking spray
Instructions
- Preheat oven to 325 degrees.
- Prepare a baking pan with an edge that will comfortably hold all of your chicken thighs with cooking spray.
- Place all chicken thighs, skin side up, in the pan. Season liberally with salt and pepper.
- Cut the lemon in half and squeeze each lemon half into bowl and whisk in the honey, garlic, and soy sauce. Set aside the squeezed lemon halves. Do NOT throw them away.
- Spoon the mixture over the chicken until covered. Then include the squeezed lemon halves between the pieces of chicken inside the baking pan. This will both moisten and add flavor to the chicken. You will be glad you did.
- Roast the chicken in the baking pan, uncovered, for 55-60 minutes, or cooked through.
- Baste with the juices at least three times to create a beautiful glaze on your chicken pieces.
- Allow to rest for 5 minutes before serving. Enjoy!

Notes
- Grab a pan large enough to hold your chicken with space around each piece. You don’t want the pan so small that you can’t get in there and access accumulated juices to baste the chicken.
- If time allows, marinated the chicken in advance!
- Cooking these lemon pepper chicken chicken thighs at a lower temperature to keep the honey from burning.
- Depending on the size of your chicken thighs, you may need to adjust the cooking time. Use a thermometer (165° F) to determine the doneness.
- Include the squeezed lemon halves between the pieces of chicken inside the baking pan. This will both moisten and add flavor to the chicken as it cooks.
- Baste with the juices at least three times to create a gorgeous glaze. You will be glad you did.
