Honey Peach White Cheddar Grilled Cheese Sandwich

Ingredients
- 2 peaches (sliced)
- 4 lices sourdough bread (or Challah, Multigrain, or thick white)
- 2-4 Tablespoons ricotta cheese (optional)
- 1 Tablespoon honey
- 4 lices White Cheddar Cheese (may add more depending how cheesy you like it)
- 2 Tablespoons butter
Optional:
- 4 lices Bacon crispy
- basil fresh
- balsamic glaze
Instructions
- Peel and slice peaches and set aside.
- Spread ricotta cheese over bread. Top one side with peaches and drizzle with honey and the other side with cheddar cheese.
- Spread butter on top of each slice of bread. Place on a panini press or heat skillet over medium-low heat. Once it is heated, add sandwiches. Cook until cheese is melted. If bread is browning to quickly, reduce heat to low.
- If adding any optional ingredients, remove the top of sandwich and place on top of melted cheese. Serve immediately as it is best served warm.
