Ingredients
- 1 tablespoon butter unsalted
- 2 tablespoons honey
- 1 tablespoon light brown sugar packed
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- ¼ teaspoon salt plus more for serving, sea salt
- 2 cups cashew nuts raw
Instructions
- Preheat the oven to 350°F. Line a small baking sheet with parchment paper.
- In a medium bowl, melt the butter in 2 30-second increments. Add the honey, brown sugar, vanilla, cinnamon, and salt, and stir together until well combined.
- Add the cashews on top of the honey mixture and stir until all the cashews are evenly coated.
- Spread the cashews in a single layer on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, stirring every 5 minutes to ensure even roasting. The cashews should be golden brown and fragrant.
- Remove the cashews from the oven and immediately sprinkle with more sea salt. Let them cool on the baking sheet; they will become crisp as they cool.
- Once completely cooled, transfer the honey roasted cashews to an airtight container. They can be stored at room temperature for up to two weeks.
