Honey Roasted Potatoes
Potatoes are roasted in a delicious honey butter dijon sauce. This is the best potato side dish to go along with your favorite steak or pork chop main dish!
Ingredients
- 2 pounds potato cubed, red
- 1 small white onion diced
- 2 tablespoons butter
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon oregano dried
- 1/4 teaspoon salt
- 1 pinch black pepper
Instructions
- Preheat oven to 375 degrees. Lightly grease a 9x13 baking pan with nonstick cooking spray.
- Spread out the cubed potatoes in the pan in a single layer.
- In a small saucepan, melt the butter over medium heat. Add in the onions and saute for about 3 minutes. Add in the honey, mustard, oregano, salt, pepper and stir to combine.
- Drizzle the butter mixture over the potatoes.
- Bake for about 35 minutes until potatoes are cooked through. Actual baking time will depend on how big you cut your potato pieces.
