Honey Soy Chicken and Rice

Ingredients

  • 1 tablespoon brown sugar
  • 2 tablespoons honey
  • ¼ cup soy sauce
  • 2 teaspoons ginger chopped fresh
  • 2 teaspoons garlic chopped
  • 2 tablespoons hot sauce see notes
  • salt to taste
  • black pepper to taste
  • 4 boneless skinless chicken breast cut into ½-inch strips
  • 1 tablespoon vegetable oil
For serving:
  • rice cooked
  • sesame seeds
  • green onion sliced
  • ½ pound broccoli optional, cooked florets

Instructions

  1. Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
  2. Lightly salt and pepper the chicken strips.
  3. Heat oil in a large skillet over medium heat. Add chicken strips; brown chicken on both sides, about 1 minute per side. Pour the sauce over the chicken and stir to combine. Simmer uncovered until the sauce thickens, 8 to 10 minutes. Toss with the cooked broccoli, if desired, or serve the broccoli on the side.
  4. Serve over rice. Top with sesame seeds and sliced green onion.

Notes

  • Adjust the amount of hot sauce to suit your preferred spice level or omit it entirely for no spiciness.
  • Try substituting cooked vegetables such as green beans or snap peas for the broccoli for variety.
