Ingredients

  • 8-10 chicken thighs boneless skinless
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp olive oil
  • ¼ cup honey
  • 3 tbsp Sriracha
  • 1 lime juiced
  • 1 tbsp rice wine vinegar

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a small bowl or measuring cup, combine the honey, Sriracha, lime juice, and rice wine vinegar.
  3. On medium heat, heat up your skillet (preferably cast iron, this is the one I use) and add the olive oil. Once the pan is hot, the chicken thighs, smooth side down, and then cook for 5 minutes. Flip and continue to cook for 5 minutes. Do not overcrowd the pan, cook in two batches if necessary. Be sure to add more oil for the second batch.
  4. Pour the honey lime sriracha mixture into the pan and let the mixture bubble, spooning the sauce over top of the thighs. After 2 to 3 minutes, the sauce should have thickened and have coated the chicken.
  5. Serve and enjoy.
