Ingredients
- 6 cups green cabbage shredded
- 2 cups red cabbage shredded
- 1 ½ cups carrots shredded
- 1 cup green onions chopped
- 1 cup sliced almonds
Dressing
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons Sriracha
- 2 tablespoons honey plus more to taste
- 2 teaspoons fresh ginger peeled and minced
- 2 teaspoons salt
Instructions
- Place shredded cabbages, carrots, green onion, and almonds in a large mixing bowl and toss to combine.
- In a small mixing bowl, whisk together the mayo, vinegar, sriracha, honey, ginger, and salt until smooth. Check the taste and add up to 2 tablespoons more honey as desired.
- Pour the dressing over the coleslaw and gently toss until evenly coated. Season with salt and pepper to taste, if needed.
- Cover with plastic wrap and chill until ready to serve. (I recommend at least 1 hour for the best flavor.) Uncover and garnish with more green onions and almonds if desired.
