Honey Sriracha Coleslaw

Ingredients

  • 6 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 1 ½ cups carrots shredded
  • 1 cup green onions chopped
  • 1 cup sliced almonds
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Sriracha
  • 2 tablespoons honey plus more to taste
  • 2 teaspoons fresh ginger peeled and minced
  • 2 teaspoons salt

Instructions

  1. Place shredded cabbages, carrots, green onion, and almonds in a large mixing bowl and toss to combine.
  2. In a small mixing bowl, whisk together the mayo, vinegar, sriracha, honey, ginger, and salt until smooth. Check the taste and add up to 2 tablespoons more honey as desired.
  3. Pour the dressing over the coleslaw and gently toss until evenly coated. Season with salt and pepper to taste, if needed.
  4. Cover with plastic wrap and chill until ready to serve. (I recommend at least 1 hour for the best flavor.) Uncover and garnish with more green onions and almonds if desired.
