Honey Teriyaki Shrimp Lettuce Wraps
Seared shrimp in a sticky, irresistible sweet teriyaki sauce combined with a mix of fresh veggies and some hearty rice served up on a lettuce wrap. Oh! Ingredients
- 1 package Right Rice Lemon Pepper flavored
- 1 lbs frozen Shrimp cooked, peeled + deveined
- 1 package romaine lettuce boats
- ½ large english cucumber
- 1 bag frozen edamame
- ¼ cup red onion
- ½ cup cheese of choice
For the honey teriyaki sauce:
- 3 tbsp soy sauce
- 3 tbsp Mike's Hot Honey
- 1 lime juiced
- 1 tsp Sriracha
- salt + pepper to taste
Instructions
- Start by preparing the rice according to the bag’s instructions.
- Then, in a small skillet, add soy sauce, hot honey, lime juice, sriracha, and salt and pepper over medium heat. Whisk the sauce together until it thickens a bit and is well mixed.
- Add the shrimp in (even if it’s precooked, let it saute for 1-2 minutes on each side). Turn off the heat and allow the shrimp to soak up the flavor.
- Prepare the vegetables. Cook frozen edamame and remove from it’s shell if not already shelled. Dice red onion, and wash lettuce.
- Then, to assemble the lettuce wraps, take two pieces of lettuce stacked on each other, add rice, then the cooked shrimp, red onion, cheese, edamame, and drizzle with desired amount of spicy mayo and any remaining honey teriyaki sauce from the skillet.
- Garnish with green onions or sesame seeds if desired and enjoy!

- If you plan to store these for later or you’re going to make these for meal prep, I recommend storing everything together except the lettuce. No one likes soggy lettuce. You can assemble the lettuce wrap just before enjoying and add a bit extra spicy mayo on top.
