Ingredients

  • 1 cup long grain white rice uncooked
  • 2 cinnamon stick
  • 4 cups water for soaking, warm
  • 4 cups water cold
  • 1 cup milk whole
  • 1/2 cup granulated sugar adjust to taste
  • 1 teaspoon vanilla extract optional
  • ice cubes for serving

Instructions

  1. Rinse the rice under running water until the water runs clear. In a large bowl, combine the rice, cinnamon sticks, and 4 cups of warm water. Cover and refrigerate for at least 4 hours or overnight.
  2. Remove the cinnamon sticks from the soaked rice. Transfer the rice and soaking water to a blender. Blend on high speed until smooth, about 2 minutes.
  3. Pour the blended mixture through a fine mesh strainer or cheesecloth into a pitcher, discarding any solids.
  4. Stir in the cold water, whole milk, sugar, and vanilla extract (if using). Mix until the sugar is fully dissolved.
  5. Refrigerate the horchata until well chilled. Stir before serving over ice.
