Ingredients
- 3 pounds Yukon gold potatoes cut into 1-inch chunks, or Russet potatoes
- 4 cloves garlic
- 8 ounces cream cheese softened, cut into cubes
- ⅓ cup salted butter melted
- ½ cup warm milk or cream
- ¼ cup prepared horseradish or to taste
- 1 green onion thinly sliced
- 1 tablespoon chopped fresh parsley
- salt and pepper to taste
Instructions
- Place potatoes in a large pot of cold salted water with the garlic cloves.
- Bring potatoes to a boil, reduce heat to simmer, and cook 15-20 minutes or until tender.
- Drain well and place potatoes & garlic back into the warmed pot.
- Add cream cheese and butter to the potatoes and using a masher, mash potatoes.
- Add warmed milk a little bit at a time while continuing to mash until smooth and creamy. Stir in horseradish, green onion, and parsley.
- Season with salt and pepper. Serve hot.

- Yukon gold potatoes can be substituted with peeled Russet or baking potatoes.
