Ingredients

Hot Cross Buns:
  • 2 packets active dry yeast , (1/4 ounce each)
  • 2 cups warm whole milk , 110 to 115 degrees
  • 2 large eggs
  • 1/3 cup unsalted butter , melted
  • 1/4 cup sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 1 cup raisins
  • 7 cups flour
  • 1 large egg yolk
  • 2 tablespoons water
Cross Design:
  • 1/2 cup flour
  • 1/3 cup water
Icing:
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice

Instructions

Hot Cross Buns:
    Cup of Yum
  1. To your stand mixer add the yeast and 1 cup milk.
  2. Stir to dissolve and let sit for 5 minutes.
  3. Add in the remaining milk, eggs, butter, sugar, salt, cinnamon, nutmeg, allspice and raisins.
  4. Stir to combine.
  5. Add the beater attachment and on the lowest speed setting start adding the flour 1/2 cup at a time.
  6. Once the flour is mixed in, add the dough hook to the stand mixer.
  7. On medium speed knead the dough with the dough hook for 5-6 minutes until smooth and elastic.
  8. To a greased large mixing bowl add the dough, turn to coat both sides of dough with grease.
  9. Cover with a clean kitchen towel and let rise for 60 minutes.
  10. Punch down dough.
  11. Cut the dough into 24 even pieces.
  12. Line a baking sheet with parchment paper.
  13. Roll each piece into a ball and place on baking sheet nestled next to each other.
  14. Cover with clean kitchen towel in a warm place and let rise for 30 minutes.
  15. Preheat oven to 375 degrees.
  16. In a small bowl beat egg yolk and water together.
  17. Brush gently onto dough.
Cross Design:
  1. Mix the flour and water to make the cross designs.
  2. Add to piping bag and pipe cross pattern onto the buns.
  3. Make a line through the center of the buns in both directions to make crosses.
  4. Bake for 30-35 minutes until golden brown.
Icing:
  1. Mix powdered sugar, vanilla extract and orange juice.
  2. Brush over the warm baked rolls.
  3. Serve warm.
