Hot Girl Summer Salad is all the rage these days!! Crunchy bell peppers, cucumbers, and pepperoncini peppers make a great combination and the tangy homemade dressing makes this bell pepper salad taste amazing!

Ingredients

  • 4 bell peppers
  • 1 large cucumber
  • 1 red onion
  • ⅓ cup pepperoncinis sliced
Dressing
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 2 cloves garlic minced
  • 2 teaspoon oregano
  • 1 teaspoon basil
  • ¾ cup olive oil
  • ¼ cup red wine vinegar
  • ¼ cup pepperoncini juice

Instructions

  1. Finely dice peppers, cucumber, and red onion and add to a large mixing bowl with pepperoncinis.
  2. Next, prepare the dressing. Combine dressing ingredients in a mason jar and shake well.
  3. Pour dressing over the salad and toss to mix. Enjoy.

Notes

  • Make sure to include a variety of colorful vegetables in your salad for visual appeal. Use at least 2-3 different colors of bell peppers.
  • Cut the veggies into small, uniform pieces.
  • Add a protein to the salad to turn it into a meal.
